Ingredients:
500 gm shrimps already cooked and peeled
1 mango
½ onion
½ cucumber
1 frisee Salad
1 red pepper
1 red bell pepper
Crushed walnuts (for garnish)
Mango dressing:
6 tablespoons olive oil
3 tablespoons lemon juice
½ mango
1 tablesppon red wine vinegar
1 teaspoon mustard
Method:
Cut ½ mango into dices. In a bowl combine the olive oil, lemon juice.
In a blender combine the mango dices, mustard, vinegar and pulse until smooth.
Stir in the olive oil. Peel and mince the onion. Thinly slice the cucumber.
Peel the mango and cut into strips. Cut the red pepper into strips.
Prepare 4 serving plates. Divide the salad into the 4 plates and place in the middle.
Add the red pepper, onion and cucumber. Add the shrimps in the middle and few around.
Add the mango dressing and garnish with crushed walnuts
