Ingredients:
200 g dark chocolate
4 eggs
25 g butter
3 Tbsp. sugar
150 ml whipping cream
1 pinch of salt
Method
Break the chocolate into pieces. In a saucepan melt the chocolate with 4 tablespoons of water over low heat.
Remove from the heat and stir in the butter until well combined. Set aside to let it cool.
Using an electric mixer beat the 4 egg yolks for 3 to 5 minutes until the mixture whitens.
Add the egg yolks mixture to the melted chocolate stirring until well combined.
Whip the cream until thickened and add it to the chocolate mixture.
Whip the egg whites with 1 pinch of salt and the sugar into soft peaks.
Fold the egg whites into the chocolate mixture very gently until just combined (don’t overmix!)
Spoon the mixture into serving bowls.
Put in the fridge and refrigerate at least 2 hours before serving.
Just before serving sprinkle with grated chocolate.
